Potato dumplings, or gnocchi, are a typical Italian dish of ancient origin going back to the 16th century when potatoes began to be imported from the Americas. Over the years, gnocchi took on different flavours, forms and dimensions but after 1880 almost all varieties disappeared except those of potatoes, which were prepared in all regions of Italy. In Rome, they were traditionally served on Thursdays. There was a popular saying that went: “Thursday gnocchi, Friday fish, Saturday tripe”.
