    History

    Since the ancient time, the squid is a shellfish always loved by gourmet. There is evidence of great appreciation of this meat by the Latin authors Catullo and Ovidio. For some people, the squid is the shellfish of the culture. Maybe the reason is that the ink of the squid was the raw material for producing the ink for writing. About the squid’s ink, Plinius the Old, famous Latin naturalist, observed the strange behaviour about this shellfish: “A strike of trident hits a female squid. All males run for saving her. But, if the trident hits the male, all the females escape away”. The squid is very popular in Liguria. You can find it cooked in many different ways: the Burrida, for example, is a typical soup from Liguria (not to confuse it with Burrida from Sardegna, which is a different dish). Here, the squid is prepared as the traditional Ligurian recipe, in soup with vegetables and potatoes.
