The island of Pantelleria cooked squid
The rich flavours of Sicily can be explored and enjoyed in Pantelleria. It is one of the most beautiful Sicilian islands known for its strong food tradition and well known products such as capers and the Pantesca salade. Interestingly enough, calamari were originally considered an unpalatable food-stuff which had no place upon the plate of the ancient Greeks and Romans. It took a few centuries before it found its way to the dining table, however, it was viewed as an unsophisticated seafood, fit only for the poor. Real fishermen sold fine fish, not calamari. It was in the Renaissance period calamari was celebrated in their cooking and considered to be the finest of the squid family. In this recipe, the calamari is cooked in a traditional way, with typical Sicilian ingredients such as capers, dill and olives.
