Saltimbocca alla Romana is - together Gnocchi alla Romana - one of the most popular recipes of Rome. When you taste Saltimbocca, meaning literally “Jumping in your mouth”, you have a real explosion of flavors. The history of this traditional recipe seems to be very young, even if we don’t know the real age and the creator of it. We only know that by the end of 1800, Saltimbocca alla Romana was a specialty of the restaurant Le Venete in Rome as it is reported by Pellegrino Artusi, a very famous italian gourmet and one of the first gastronomic critics, who had this dish for the first time in that restaurant.
